My school only offers a few AP courses that I'm not interested in. I'm a junior now and I've never taken a AP test/course before. I think I'm gonna take AP Calculus next year. The question is, should I self study a few APs and write the exams during my Senior year? Will doing this help me in the admission process? impress college admission officers any bit?
btw, I'm an international.

By the time you take the AP's, you'll already be admitted to a college, so it won't really help the admissions process. However, feel free to self-study if the college you go to accepts credit or placement for the AP's. Just don't waste your time doing simple exams like Human Geography or Environmental Science that get you no credit.

can you indicate that you are going to self-study exams when applying? will that help?

College admissions people won't really care. It kind of depends. I mean, if you're self-studying primarily to get college credit, that's that. It won't impact whether they'll accept you. But if you love chemistry, for instance, and it shows in your application, but your school offers only honors chemistry, then saying that you'll take AP Chemistry is a helpful piece of information.

Short answer: if you want to tell them, do so. If you don't want to, don't. Might as well, though--can't hurt, but keep in mind that the number of AP exams you self-study for doesn't matter.
