So, I want to self study AP Comp sci and AP Psych along with 5 other APs (AP Chemistry, AP Calculus BC, AP English Lang, AP Enviro, and AP World). What books, notes, resources, etc. would you recommend?

Use the Princeton Review book for AP Psychology and you should be set for the AP exam. If you want good review books for any AP test, the Princeton Review is probably the best bet — however, if you have the time to overprepare yourself, Barron’s books are good as well. Are you sure that you’ll have the time to self-study all these exams? AP Calculus and Chemistry require a lot of time, and AP Lang is more dependent on your writing abilities.
AP Calculus and AP Enviro I self studied over the past summer because I knew I was going to have a tough time handling all these APs. AP Lang I took a couple of practice exams from princeton review and I got 4s on both and asked my AP Lang teacher to take a look at the essays after school so that I would have an accurate score. I am worried most about AP World History, AP Chem, AP Comp Sci, and AP Psych. @azwu331 I heard that AP Comp Sci is really easy to study, is that true?
@ro2400 If you have a decent computer background, AP Comp Sci should be easy to self-study.
My son (scored a 5 in 10th grade - self study) took EIMACS online for AP CS https://www.eimacs.com/educ_apcsoverview.htm the book was the "Be Prepared book – http://www.amazon.com/Prepared-Computer-Science-Exam-Java/dp/0982477538

@ro2400 How hard was it (and how long did it take) to self-study AP calculus? I have it next year and was thinking of prepping over summer.

You should also be aware that many colleges no longer accept AP scores from students who never actually took the class and got credit for it. I suggest before you put all that time and effort into studying that you double check with the colleges you are interested in if they will accept an AP score as transfer credit if you never took the class.
