does it make that much of a difference if i take "only" 3 APs next year instead of the 4 that i could take? i'm not trying to take the slacker route...APs at my school are pretty difficult (most only get 4s and 5s...3s are unusual)

yes, you'll be burned at the stake.

actually, three is pretty good enough i think. what are your other classes?

i wouldn't take 4 AP classes just for the sake of taking another one. you really don't want too much work during senior year and apps.

if i took 4 aps, this would be my schedule:
Per 1 - AP Chem
2- drawing and painting 1 (1st semester)/justice and peace (required religion)
3- AP Calc
4- AP Spanish
5- AP English Lit
6- Gov/Econ regular

With 3 aps:
1-Chorus/World Religions
2-Physiology
3-AP Calc
4-AP Spanish
5-AP English Lit
6-Gov/Econ

it's fine.

is physiology easy or something?

do colleges look at your senior year grades?

What sort of major are you considering? If you want to go into, say, chemical engineering, then taking AP chem is important. If you want to be an English major, I don't think it matters much unless you're trying to get into HYP.
