Senior Year Electives

So it's my senior year (3.5something unweighted), and I'm starting to wonder about what my classes will be. I've gotten my 3 cores down, as well as an elective (AP Government, AP Calc BC, AP Lit, AP Comp Science). My options are as follows:
AP Physics
AP Psych
Engineering
Culinary Arts 3-4
ROTC
Dance 1-2
Band
Concert Choir
Student Council
Teachers Assistant (for one of the two periods)
Off campus EMT training (for both periods):

I am very torn about what I should do. I show no traditional EC's for my first three years, only private language tutors, private piano lessons, and karate 2-3 times a week. My father wants me to take Physics and Engineering to support my probable STEM major, but I'm completely opposed to the teacher's teaching style in there, same with Psych. I'm taking Culinary 1-2 this year, but I managed to get into the class taught by the poorer teacher, and I don't want to take that risk next year. Band would probably the most time-consuming one there, as our next-year football schedule involves a lot of schools from across town (20-30 minutes each way). The EMT'ing sounds nice, but most of the kids are taking just to get off campus early. Dance is mostly because half the cheer team is joining and, well, make your own conclusions. I was formerly in a choir, but that was 6th grade. This leaves Student Council (time consuming), ROTC, and TA'ing, all of which had been suggested to me as good fits by other kids. In your opinions, are any two classes here markedly better than the others when trying to show colleges of my "well-roundedness"? I'm currently leaning TA and ROTC, or ROTC and Band. SMH, it's such a complicated situation. Thanks in advance.

Badumpity bump bump bump?

Well what do you plan on majoring in? Physics will come in hand of your major requires physic or EMT training would come in handy you plan to do something in the medical field. Same with the culinary arts. I have always personally wanted to take JROTC, but my school doesn’t offer it. JROTC is a good class to take no matter your major especially if your thinking about the military or trying to get military scholarships.

Electrical Engineering is currently what I’m thinking about, and our school’s engineering course is a lot more mechanical focused… Medical may be an option if I get the dinero to get through med school…likely story.
