When I go to the supplements for my schools on the Common App (ex. Columbia University) there are sections that ask me to list my favourite quotes, books, movies, pastimes, etc. Am I supposed to simply list these items, or do they want a more creative format like an essay?

They just want the truth. What they are trying to do is trying to get to know you as a person, what you do in your spare time, what you enjoy and all that fun stuff. Of course if you can find a way to put some creativity while keeping it simple then great! But usually it’s just a few sentences.

So I am supposed to write in full sentences rather than create a list?

Full sentences are not needed. They can simply be stated

List is fine. Be thoughtful about including controversial topics - Do they fit into your personality as exemplified in your essays. Diversity is good. But extremism may not be. Might want to think twice about including “anarchist cookbook” among your favorite books.
