I received a 1790(1240) on my first attempt and an 1890(1250) on my second attempt. I am happy with my new writing score but I want a higher math+reading. The problem is that my math stayed the same and my reading only increased by 10 and if I've plateaued I don't want to waste money and time. My ACT was a 30 with 28 in math and writing, 30 in reading, and 33 in science. My goal is UF and I'm wondering if I should take either of them again.

I think a 1890 and a 30 are pretty safe for the University of Florida. If you were going higher, I would suggest to consider retaking. But for now, those are very good and I’m sure you’ll get into there.

all that matters at UF is if you have a 4.0

I didn’t, had higher SATs than you, and was rejected.
