I'm trying to plan my flight home for thanksgiving and I save $90 if I leave at 8:30 am on Nov 27th instead of that evening, but I have the Muir 90H freshman seminar and a 50 minute Math 20C lecture that day. Would it be acceptable to skip those classes?

Whether or not it’s acceptable is entirely up to you and your professors. Many professors cancel class the Wednesday before Thanksgiving (but not all do). Whether or not those classes will be canceled or if anything important is happening that day depends on the professor. You can try to contact the professor and ask if they will be canceling that class or if attendance is mandatory because you need to make travel arrangements for Thanksgiving.

Better start making friends in your classes so you can get updates for classes you miss. Some [not all!] professors are keen to teach material that might (or even likely) show up on exams, either as problems, or even as extra credit. Some even give extra credit for showing up. Depends on the professor, but it was my observation on some of my upper-div engineering classes. Otherwise, I would skip (if I were you; I always go to all my classes); no one will hold you back except your conscience.
