So confused and stressed!

I was thinking of taking Spanish 102 and Psychology 101 this summer at a community college so that I don't have to go insane with Spanish 3 next year (I suck at Spanish and struggle to maintain an A in it)
So I found out that the summer classes at my community college starts on 6/3 (6/17 at this other one), when I'm still in my sophomore year. That's about 2 more hours added onto my schedule. I thought it was going to start when I finished sophomore year. Not to mention the time it takes to drive there...
I am SO stressed! A little less than a month of about 8 HOURS OF SCHOOLWORK!
Also, next year should I take AP Psychology or Journalism? I have pretty much no ECs except for a few community service hours.I want to get accepted into a UC. (UC Berkeley is my DREAM school!)

I currently have a 4.0 GPA unweighted, a 4.2 weighted.
I am in American Cancer Society
Vietnamese Student Association
Done some hours with ACS
Some hours at a Buddhist temple

Freshman Year:
Honors English
Algebra 1
Spanish 1
Biology
World History Honors
PE

Sophomore Year:
Geometry
PE
AP Human Geography
English Honors
Spanish 2
Ceramics

Next year I'm taking:
Journalism (or AP Psych?! Can't choose!)
APUSH
AP English Lang & Comp
Spanish 3 (unless I take it at a college this summer)
Alg2/Trig (hopefully)
Health (yeah I waited 'til now lol, I might take it online)

I hate Spanish. I don't like the teacher that's going to teach it next year. I hate it. I want to get Spanish over with.

Please help =(
Ugh...I don't stand out at all. I feel like I am not a competitive applicant. My application will be so boring and dull. What should I do? Also, please answer AP Psych or Journalism for me please! :)

Who knows if you’re a competitive applicant. Your GPA is about 1/3rd of the total cumulative GPA that UCs consider (I’m guessing you’re a sophomore). Hence, there’s not much of an inference that can be made until you finish more years of high school.
