Summer and the Application Process

I'm currently a high school sophomore, and so far I've been having trouble deciding what I should do over the summer.
My family wishes for me to visit relatives over in another country because this could be the only chance that I have enough time to visit them (seeing as though Junior year is coming up) and I had a summer program planned out in that country for awhile now. However, apparently the qualifications of the summer program for age requirements went up a year, so now I can't apply.
So, I'm basically worried about how this is going to affect my college application, seeing as though the only thing I'm doing this summer is traveling for the majority of the time then taking SAT classes in August. Are colleges meticulous about these types of things?

In addition, last year I did some volunteer work at a relative's local church but I didn't receive a letter stating that I did whatever I did. I'm not familiar with the application process, so I was wondering if you simply record what you did in terms of extracurricular activities or if you need letters to prove it.

All feedback is highly appreciated, thank you!

Have fun, yet be productive.

College applications do not require letters for community service. I suggest you download a copy of the Common Application to familiarize yourself with the format.

maybe look into some community service projects where your overseas family lives and so u can visit them and be productive at the same time.
