I’m currently a sophomore in highschool looks for internship ideas. I have an interest in business/law. I’ve heard many times that demonstrating a passion is imperative in college admissions so I’m looking to take advantage of my free time in the summer. I’m not really sure how to approach this or what to apply for, Thanks.

You could try looking around and seeing if you could apply to a related job. That’s what I am doing this summer albeit for a different interest / purpose.
One word of advice though: Internships are not necessarily the only way to demonstrate your passion. I’ve had friends who ran fundraisers at school, led a club, etc. and got into programs for these majors.
Are you an officer at a club at school? Business usually comes with a leadership component, and having some leadership role that you enjoy is also incredibly great for demonstrating passion. Does your school have a Model UN club (basically law junkies / foreign policy heaven) that you could join?
Don’t take my advice word for word though. I’m a high schooler just like you.
