For the supplement essay there is a list of POSSIBLE topics, so that means I could really write about just anything no? not just what they have listed?

You can write about anything you want.

You can write about anything … or nothing! Many students are accepted without submitting a supplemental essay; others are accepted just listing books they have read, while others are accepted submitting a secondary essay they used for another college. The choice is pretty much up to you!

You can write about anything, though a description of your underground cockfighting club or a passionate defense of legalizing hard drugs probably would make poor choices for topics.

In seriousness though, you should only write a supplemental essay if it will actually help your application in some way. A “neutral” essay, i.e. one that neither helps nor hurts you, will in fact probably hurt you since an admissions officer doesn’t want to have his time be wasted.
