Are we allowed to send in extra recommendations, essays, etc.?

yes, you are...I actually sent in an extra recommendation...

but be sure it is something meaningful! For example, my extra recommendation came from my violin teacher, who is the Assistant Concertmaster of the National Symphony Orchestra--he was able to truly enlighten the adcom about my experiences, my level of playing, my passion, and how I learn, of course, aside from the extracurriculars and awards I had listed--but I guess the story is this: there are plenty of people who get in without any supplements, so just be sure whatever you send is something you really want the adcom to know about you and something you believe truly makes a statement about you that can't be found elsewhere on the application!

And on that note, good luck! Hope to see you at Columbia!
