I’ve done some calculating and have come up with a 2.5 GPA prior to applying to Cal Poly. Not including Fall 2016 courses. I will have my AA-T by the end of Spring 2017 and work/take part in a club 25+ hours a week. My major that I’ll be applying for is nutrition and the degree I’ll be getting is in Nutrition and Dietetics. I will have all the required and desired courses completed as well with a grade C or higher.
Based on these stats, do I have a good chance at getting in for Fall 2017. The part that worries me is obviously my low GPA but most of the courses that I need towards my AA-T degree come in Fall 2016 and Spring 2017. Which are the courses Poly will giver me credit for. By the end of Spring 2017 I will also be well over the 70 units and a few courses that I got bad grades in don’t even pertain to my major or towards GE’s. Does that affect my chances too?

I don’t know the transfer stats as well, but I would strongly recommend you have other options you are happy with. Admission is getting super selective at Poly.
The average Transfer GPA for the College of Agriculture and Environmental Science (Nutrition major) last year was a 3.38. I think anything below a 3.0 will be a very difficult admit. I agree with @eyemgh, have several other backup schools on your list.

Transfers have required and desired courses. Without all the required courses, you get rejected, but the strongest candidates have most if not all of the desired courses too. Anything you can do between now and the time your application goes in to raise your GPA will help. I can’t stress this enough though. Even if your GPA was higher, Cal Poly is a tough admit. ALL applicants need a safety or two that they’ll be happy with. Good luck!
