Tricky situation for reccomendations?

I know this is long, bear with me here please.

I don't have many options as to who I can ask for a letter. My best subjects (English and History) I took online last year as APs since our school does not offer any, so I can't ask those teachers since they don't really know me. I don't want to go further back than junior year because it will seem like I don't have anyone to ask this year.

I know I can ask my spanish teacher, who loves me and has taught me for around 12 years.

My options for the second one are:

To have my AP Psychology teacher, who is also the school counselor, to write me the second teacher recommendation and the school principal writes the counselor one (can I do this?). My school is very small and both of them know me extremely well and I have worked on many ECs with them (I am known as the "principal's pet").

For my counselor/AP psych teacher to write both the counselor rec (focusing on me as a whole) AND the teacher rec (focusing on me in class) which he is willing to do and suggested to me, but I don't like this option.

My counselor does the counselor one, and I get my Pre-Calculus teacher from last year to write me the second one. I got an award for "most-improvement" in her class and she tutors me in SAT math and I know she likes me, I just don't think it will be outstanding because my strengths do not lie in math and the letter might not cut it for the schools I'm looking at.

Advice?
