Would it hurt me if I put undecided, rather than.. something like Econ?

If you are undecided, put undecided. If you intend on majoring in econ, put econ. It's really that simple.

I was wondering this too. Would it be to your advantage to put undecided if your intended major at a school is very competitive?

I think putting your major gives adcoms a lens through which to look at your ECs, etc. If you feel well prepared for that major and do intend on pursuing a degree in it, put it down. Otherwise, put undecided.

At most schools, you won't officially declare your major until your 2nd year of college. Intended majors for the most part have little to no bearing on your admissions, as colleges know that students will typically change their mind several times during their college career.

The school within the college you apply to though could have an effect on your admission; that is to say, the College of Arts and Science at XYZ University might be more or less competitive than the School of Engineering.

Okay, this question has been asked too many times. Just put down whatever is appropriate. Some people think that girls putting down physics as the intended major is impressive, but that's a distorted view of the fact that girls who are extremely strong in physics would stand out. It's not enough to just say that you're going to major in physics. That only helps if the rest of the application shows that you're strong in physics.
