I have taken 2 SAT IIs but some schools require 3. I am taking both AP US History and AP World History next year. I would get Barrons and Princeton guides to teach myself materials that we haven't covered yet in class. Can I still do OK on the subject tests even though I only did half of the curriculum in school, or should I just stick with my 2 SAT IIs and not apply to schools that require 3?

If you only studied like half of the curriculum, I wouldn’t recommend it. The Subject tests are a LOT more about specifics than I though they would be. I don’t know, though, maybe if you start studying early…
(I just finished the test myself, and am self-medicating with ice cream and cookies cries)

They are rather specific. Since you have a whole year, if you really want to do this, get the actual text book for an AP course, not a review book, and read it. Then you can read the review book. That’ll get you prepared, but be warned, that’s a lot of work.
