What are some of the most impressive EC's people have done?

As I’m reading through CC, I see these kids who’ve listed for their EC’s that they’ve created apps with millions of downloads, published books, started companies, founded nonprofits, authored important, original research, and yet they’re still getting rejected at top universities. I mean, if that’s not considered impressive, what is?

Usually (from what I’ve read), such students seem to have a great record academically as well, so it’s not like their grades are breaking them.

I’m starting to wonder what’s considered “good enough” and what kind of person is “unique enough” to get accepted into top colleges. Does anyone have any examples of such people?

Malala Yousafzai is the youngest ever Nobel Laureate.

Those things are impressive. Who said they weren’t? Colleges are also impressed by students with no resources or support who manage to get high grades and test scores while working or looking after family. There is no one thing that gets kids into top colleges.

Having spent a lot of time on CC, I can tell you that your letters of Rec are extremely important. Colleges care about what your recommenders think of you. Be a good person, work hard, be likable. ECs are very important to some colleges, but if they don’t like you, you aren’t getting in.
