Depends on where you are applying. Human Geography is considered an easy AP and many elite schools don’t even give credit for taking its corresponding AP exam. I don’t know which of the SAT Subject tests are considered to be the easiest, but you should aim to take at least either Math 1 or Math 2. Will they know? Most probably. Will they care? Not really, except for a few exceptions.
In terms of curves, the SAT math 2 is really easy to get a 800 in (you can miss 5-7 questions and still get a 800). (getting a perfect in Math 2 puts you in the mid 80 percentile). Chemistry has a 3-5 point curve out of 85 questions (?), while physics has a 10 point curve ish out of 75 questions. In my experience, I had the most problems with US history (10ish curve out of 90 (95?) questions. I got 670, 670, and then finally, 750).
Well, it really depends on what you are good at, but taking the SAT Math 2, SAT Bio and SAT Chem are probably the most popular, at least in my area (Silicon Valley). It’s easier after you take an AP Course in the subject (ex: AP Bio), but if you do take an AP course in that subject, sometimes, it’s useless to take a SAT subject test in that unless you are missing the 3 subject tests colleges want you to take. (Most want 1 math and 1 science at least). Admissions will have a general sense, such as SAT Math 1 is obviously easier than SAT math 2.
After taking AP US, the us history subject test was quite easy and I got a 780 with no studying. Lit was medium, maybe a little harder than regular reading comprehension.

In my opinion, Math2 and US History are two of the most manageable exams. The sciences are not too bad given that you’ve done coursework in that field already.

Does anybody know the curve for SAT German and is it difficult? @Ghentsphenze @An0maly @HSStudent2013 Also, do you think it is bad if I do SAT instead of French considering I will be studying French throughout the entire duration of high school? Our school only has French or Japanese and it is compulsory to select one. I have a passion for learning German so I really want to do the SAT German.

It depends on your skills, too. Both my kids took the Lit subject test, and found it ridiculously easy with a very small amount of studying. But they are both lifelong readers with strong CR scores, too.
