What can I do to 'up my game' this year?

Ok, I really didn't do a ton of ECs or Honors courses, but I have a an attainable plan for my next 3 years.... ALTHOUGH my school usually only has one period of AP classes and Honors classes so it is SUPER unlikely the in my junior and senior years my schedules will work out :((

My ECs for Sophomore Year (help!!)

JV Volleyball
JV Tennis
Boys Volleyball Team Manager
Yearbook Co-Captain
Community Service Club
Cross Age Connections (helping 8th graders plan for high school life)
ESL Tutor (I want to be an ESL Teacher!)
50 Hours Volunteering at Local Hospital
4 Hours for the Town

I know I need more but my school has VERY few clubs that have over 5 active members :(
ANY IDEAS?

Anyway here is my plan for Sophomore year:

Gym
Honors Biology
Honors Spanish III
Honors Chinese II
Latin I
Algebra II (I will switch to Honors if possible)
American Government
Sociology
Pre-AP English 10
Health

I get As, maybe a B+ once or twice a year...

I'm also going to do a online college course in the spring and 5 more in the summer along with a Volleyball Workshop.

Here are a couple of my thoughts...

My town has 12 elementary schools... 3 middle schools... and two large high school, yet hardly any of the kids read. I was thinking of helping create a few school/library scholarships/awards sponsored by some big companies in our area.

As I said, my town is bustling with kids yet there is no town league for Volleyball! Manyyyy town around us have them so we are always being beat because our kids have never played before. I was thinking of organizing a town league for girls volleyball, maybe a boys league will develop in the future.

ANY IDEAS are welcome!!! I want to be an ESL teacher abroad and probably play volleyball in college and am looking to go to a top university (something just below the Ivies, maybe UCLA?)

Also, I’m not religious so I can’t volunteer or win awards for something through a church, temple, mosque, etc. :-S
