I don’t think the question is offensive. Schools are looking for a certain kind of diversity. Some students can offer exactly that. Why not find out where you are likely to gain from your life experiences (knowing that in doing so, you are automatically going to put yourself into an environment where you are not part of the majority culture and therefore potentially at a disadvantage - a disadvantage you would not experience were you to attend a school that had a significant population of students coming from a similar cultural background.)
Back to schools that would value the diversity that an Hispanic applicant might add: Midwestern LACs for certain. Go to the Common Data Set for any schools you are interested in and check out the profile for diversity. Any school where your particular kind of RM is U, means your application may get a second look if you otherwise meet the academic requirements for admission.
