What major do you think is the easiest to get into for CALS?

Does it matter what major we put ?

I think it does to an extent, but you should really put the one you are most interested in. The essays on the supplement matter to the admissions people. I think after reading thousands of essays, they are pretty good a fishing who is sincere in their interest and who isn't.

It definitely does matter which major you put. If it isn't a match, they won't accept you.
For example take these fact: A kid has perfect stats and amazing ECs showing a clear interest in business. He sees that AEM has the lowest acceptance rate so he applies to a major that is less popular with a seemingly high acceptance rate. He would probably get rejected from that major and definitely had a better shot at AEM.

I think AEM and bio have low admissions rates. I haven't confirmed that though. Just what I've heard.

I believe AEM is one of few majors at Cornell that give out stats. Usually, it's only the college/school that gives out the stats.
