Next summer I have two options i'm looking at. An internship program in London, or taking college courses in Paris. Which one do you think would be more enticing to schools and help me separate myself from other applicants?

It might be important to know more information, such as your major(s), year in school, grad school or job plans, etc. I would probably say right now that the intern job is more impressive. After all, an employer DID hire you, when you begin an intership.

They are both summer programs for high school students. I’m a junior and looking to major in finance.

With no additional information the internship. Your academic record and test scores will show that you are a capable student. The internship will show you can succeed in another arena. It also paves the way for further jobs which will eventually make a difference if you are applying to grad school in the future.
Best of luck!
