I've heard some different answers for this question, but what does everyone think?

Some people say December because of procrastinating seniors (such as myself). But I’ve also heard that’s offset by high-achieving Juniors taking it earlier.

Perhaps one of those exception days when international testing isn’t available or Sunday testing isn’t available or rush reporting isn’t available or something like that. The collegeboard always has these random days in like May or January that for whatever don’t have some of the features of other test dates. Might be fun to go ahead and do it then because you feel sorry for that date.

Your test scores will not be affected by the other test takers’ results. Take the test in a month that works well for your study schedule. Jan, May, and Oct are the months in which you can get your test back, which is helpful for some people.
