The truth of the matter is law school admissions is 90% determined by 2 numbers… overall GPA and LSAT score…
Plus, it is super expensive with almost zero financial aid… which means a lot of loans.
So @ucbalumnus is right…apply to all those schools, and then compare financial aid packages… go where it is cheapest.
SDSU for business. I would look at USD for Poly Sci (especially if you like social action- the Kroc Center for Peace & Justice is there). PLNU for high GPA. SDSU will likely be lowest cost, but may be the hardest to gain acceptance.
Are you applying to CSUSM as a lower-tuition safety? (or is it too far north?)

I agree with the other posters. Most law schools will care more about GPA and LSAT scores than about which college you attended. But why are you limiting yourself to the San Diego area? Is this self-imposed, or are there circumstances that will not allow you to leave the area? There are many good options in CA, such as UCD, UCI, UCSB, LMU, Occidental, Pitzer etc…Definitely apply to UCSD and USD, but also look beyond if you can.
I agree with UC bal… I’m a doc and we have plenty of med students rotate through our office who went to colleges I have never heard of … I Also know people who wanted to go to med school but found the sciences at the more prestigious colleges too cut throat. There are many ways to get where you want to go.

BUT …you are NOT talking about H vs UNR…you’re talking about SD univs…which will be seen as peers by law schools. They won’t care.
You want bucolic, low cost, and undergraduate Poly Sci to underly a law degree? Look at Alliant International out in Scripps Ranch! (used to be USIU until it went bankrupt and sold out). Tuition is like $10,000/yr. and they even have a Law School that teaches “to” the Bar exam. You would want to commute.
I’m going to echo Alexandre and ask why you’re only considering San Diego universities. Really, the universities on your list aren’t similar other than locations. Academic philosophies, religious requirements, orientations of the student body are extremely different at all three universities (however, SDSU has a healthy population of students who would be interested in USD and Point Loma Nazarene).
If you’re an evangelical Christian, I would eliminate University of San Diego from your list. IMO it’s probably better than PLNU academically but not as fulfilling spiritually. If you’re not an evangelical Christian, don’t go to PLNU.
And keep in mind that the overwhelming majority of students who start off as pre-law do not actually go to law school.
