I got an “internship” at a nonprofit organization and will be helping to work in the law department and was wondering if college admissions will take notice at how I am exploring the law field as well as being a member of the National Speech and Debate Association? Well this increase my chances of getting accepted into a college known for lawyers?

That will definitely get noticed, and good job on doing an internship/community service (there is a difference) in something you’re genuinely interested in. Don’t get caught up in the college app game.
Will it increase your chances? The college you’re referring to is so selective it’s a crapshoot. Many “lawyer-types” will be applying there. It will help admissions determine the kind of person you are, and if they’re looking for someone like you, then yes, it would help your chances. It’s good to specialize, which seems to be what you’re doing. It definitely won’t hurt. Sorry for the ambiguity, but you’re essentially asking if something will bump your chances from small to small.8… yes, but the chances are so small it’s a crapshoot
Also, and you probably know this, if you’re looking to go into law, your undergrad doesn’t matter as much as your grad school.
