I guess I should first ask whether self teaching an AP would be beneficial in terms of college admissions. Would self studying something like AP Psychology be good?

If so, which would you recommend/is easiest for self teaching/studying?

I was looking at psychology and microeconomics. I like sciences and "math.:

jamie i dont think doing extra APs on your own will really help in the college admissions process-- most dont care much about your AP scores-- agree it should just be if your passionate about it

Agree with the above. Don't self study at all if you have to ask which subject. It will probably help a tad with admissions, but it wont do you anything great. In fact, colleges will probably see through it if you do it for the wrong reasons.

If you are going to self study, do it because you really are interested in a class that your school doesnt offer. No one can help you with this question besides yourself.

I don't really get self-studying in general, but if you're going to, Psych would be a good choice. It's all pretty simple to understand, and for AP, is largely memorization. And it's just easy.
