So starting this Summer-mid of Freshman year I will be taking APUSH and AP Chem even though they are offered during Junior year (so I can get it out of the way,) and so in Senior I can get College Credit and take fun classes instead

This is because the only two classes offered in Freshman year are Honors Math and Honors Environmental Science, which I heard was not worth it so instead I figured to take these classes during my easy Freshman year

But that said, given I am taking the classes Freshman year, will they not count towards my GPA? I have heard schools ignore Freshman grades/workload

Not to mention I will be taking Subject Tests/AP Exams at the end of the school year next year

Well I mean Junior classes for our school, given they see the OFFERED classes at your school (how else would they compare rigor,) they would see APUSH and AP Chem were offered during Junior (inferred if they see all offered classes,) hence seeing I chose a harder rigor given it was not offered during Freshman

Admissions officers are not going to assess rigor by analyzing what classes are offered what year. They don’t have that luxury of time. Your guidance counselor will inform colleges of the rigor of your schedule from filling out the box on the upper right side of p2:
