I spent the better part of yesterday night writing what I feel like is one of the best essays I've ever written. The problem? Its about 500 words longer than the common app allows
(in hindsight, I use a lot of colliqualisms and smaller words, so it doesn't seem too long when read)

Could I use this for supplements (such as UChicago's) or applications (Maryland) that dont have a word limit? Is it still too long?

Yeah I came across the same problem…my supplement essay is a little over 1000 words, but I feel it’s one of the better essays that I’ve written. My common app essay is exactly 500 words, but it definitely lacks depth and I’m probably going to extend it. I’m pretty sure AdComs won’t count the number of words, but if its super long and it detracts from your topic, they might notice.

And also, are you submitting your essay online via CommonApp? Because I don’t know if I should submit my essay (its in a Word document) single space or double space (its 2.5 pages double space, but 1 1/3 pages single space).
