How tough is 19 credits in terms of workload and homework compared to high school classes on the IB and/or AP level? How about compared to a community college?

Part of it depends on the courses and the professors. If it’s all technical courses, be ready to have no life. If there are humanities mixed in, you’ll probably still be pretty busy. Same rules apply at a community college, it’s a bit of a gamble when you have that many units.

Look at the average GPA for that professor and that class and see the distribution (if you have access to that data). A harder class with a good (or easy) professor is always easier than an easy class with a hard professor (at least in my experience).
Also look at the syllabus and estimate how much time per week the work will take you. Chart out a schedule of sorts - eating, sleeping, studying, homework, etc - and see if you have enough time. If looking at it makes you nervous or dread it, drop something.

Even if its all gen eds, 19 credits is a lot of time taken out of your schedule to attend classes, do readings, homeworks, and studying for quizzes and tests (which you may have every single week because of this) just be warned of the time commitment!

You can probably do it. If you do homework most of the day, and don’t like to party.

I really like your idea on looking at GPAs of students with different professors and I would like to try looking at that. Do you have any suggestions or advice on how I can go about getting that information? Do I simply ask each professor or is there a website or something that gives info like that? Thanks.

have you tried ratemyprofessor.com? You can also ask current students, as they woudl know the best

myedu.com gives you a breakdown of grades for each professor in each class.
