first off, I'm planning on applying to cornell as an undecided major, and i have a few questions about it: Can I even do that? How would the essays work since theyre school-specific? Would it affect my chances of getting in?
Also, I want to go ED, but my my sat I date is set for nov 4th. I know that JHU allows you to send in a written statement as to why you chose such a late test date, but does Cornell do the same? Can my upcoming ACT(hopefully 31+) scores compensate for a lack of good SAT(1910=[)? I'm sure I have more to ask, I just cant think of anymore right now, so I'll reply with more whenever one comes up. thanks to anyone who can help.

You can write your essays about your future passions in general. In some of the schools/colleges at Cornell, you can't declare your major until sophomore year anyway. IMO, the only reason being undecided would hurt you is if you had no clue in what you were interested in at all. You can add a brief message to your application stating your late SAT date. However, that either means they will look at your app regardless of the score, or they'll have to wait to get that score after already considering other ED's.

Take this with a grain of salt, as I'm not sure I'm 100% correct.
