Towards the end of 10th grade and beginning of 11th, I spent the majority of my week caring for sick mother. Is this worth putting on the activities section? It severely impacted the amount of classes and extra-cirriculars I could take.
First, I’m sorry that you had to deal with this - it’s not an easy task, caring for your mother as a teenager.
Second - very definitely do so. Taking care of your sick mother is far more important than any extracurricular activity, and it demonstrates a lot more maturity and responsibility than most other ECs out there, and AOs understand this.

Caregiving is the toughest job in the world. Of course it belongs on your application! Ask your guidance counselor to mention it in his/hers letter of recommendation as well. This will help validate it as legitimate.
