I checked the website of the school I'm applying to concerning supplementary material, and they specifically said that I should only send in material that shows "strong" talent. Otherwise, the information may harm my chance of acceptance.
I was thinking of sending an actual research report I did in a science research program, where I worked with a psychology professor on his project. Should I send this in?
ALSO do I have to send proof that I did my extracurriculars, like, official letters or certificates?

No one here can help you because we don’t know the quality of the paper. What does the psychology professor say about the quality of the paper, has it won awards, has it been published in a journal? These are the types of questions you need to answer to determine the strength of the paper.

You also need to consider the level of the school, to some degree, the more selective the school, the higher the expectations for what is considered ‘strong’ talent.

No, you do not need to send any proof along with your ECs. Please just follow the directions of the CA and the schools you are applying to, they list everything that you need to send.
