Another thread about the race box: Does "White" mean Caucasian?

When I was applying, I found out that many college applications have the option of "White" instead of "Caucasian." What do technical Caucasians with "exotic" features and darker skin typically put? I know some apps have the "White (Including Middle Eastern)" option which makes it easier for people who aren't of European descent, but what do they do for the apps that simply have "White, Asian..." with no specific mention of western Asia? To my knowledge, "Asian" typically refers to East Asia; correct me if I'm wrong.

Also, a more specific second question: If they give you the choice between White and Middle Eastern, what do you put if you're Armenian? Are Armenians white enough to be "White," or are they just in that awkward no man's land that's not quite "Middle Eastern" but not quite "White" either that elicits choosing "Other" or not answering at all?

Please see the CA for racial categories, these are the definitions used for college admissions.
