I want to become an optometrist. I am currently a junior in high school and I have to pick out my classes for next year. I cannot make a decision between these sciences though. Any suggestions? How are each of the classes?

I’ve never taken AP Physics C (not offered).
But between AP Bio and AP Chem, I thought AP Chem was more conceptually interesting. There’s more math but it’s not hard math. AP Bio has basically no math, AP Chem has algebra/logarithms, and AP Physics C involves calculus but I’m not sure how much.
AP Bio is probably the easiest, though. And if you’re going into the medical field it might be the best choice, but I don’t think you could really go wrong with any of them.

AP physics C requires the use of calculus right off the bat. Within the first weeks of the class you will need to do problems that require integration and will be expected to be able to do it.

In order of the amount of math used its bio < chem < physics
In order of memorization its probably physics < chem < bio

If you’re significantly better at math than memorization, or vice versa, that could make a difference, but I found the difficulty to be similar. (Obviously it depends heavily on the teacher, though.)
My personal favorite was bio.
