So I took AP pysch this year and sent in the ap exam scores but I was wondering since I receive credits for this class does that mean I have one less class to take or could I take a different class instead?

AP Psych fulfills 3 units in the GE section (D) Social Sciences. You still need to take 6 more units in this area or 2 more classes. So yes, you have to take 1 less class for your GE requirements.
