AP English or Chinese teacher for letter of recommendation?

I'm getting 3 letters of recommendation for the colleges I'm applying to. One will be from my counselor of course, the 2nd will be from my math teacher (where I got basically staight A's in that class), but for my 3rd I'm not exactly sure who I should ask. I narrowed it down to 2 teachers:

AP Language and Composition 11 teacher:
She was my teacher for only 1 semester, I got B's in her class and I got a 4 on my AP exam. She knew me as a good student but I wasn't even close to the best, there were some really smart people in my class.

Chinese teacher:
She was my teacher for 2 years, I got A's in her class every time, she knows me very well and I was one of the best in the class. I'm even in the Chinese Honors Society. However, Chinese 1 and 2 are not AP and not even Honor's they are on level so I'm not sure if that would hurt me at all.

What it really boils down to is do I want a teacher from a high level course that I did pretty good in that knows me somewhat well, or a teacher from a fairly low/mid level course that I did very well in and who knows me very well to write me a letter of recommendation. What do you guys think? Thanks.

there was a link around here somewhere to MIT’s site and it discussed the Rec letter, and what they are looking for. they even had samples of good and bad letters.

what they are looking for is a letter that will tell them something about you that they can’t get from reading the rest of your packet of information.
