I am currently stuck between these 3 choices. I do enjoy learning about history a lot, so that might be better for the third option. APES seems interesting, but I heard it can get really difficult. Do you think taking two AP history courses is overkill, or is it possible?

APES is usually considered an easier AP I think, but I’m not positive. Might want someone to verify that. Like always, it’s greatly depends on the teacher and varies from school to school.
It really depends on your other classes and what grade you’re in (I am assuming these are not the only two classes you’re taking):
If you’re not taking another science course already, take either option 1 or 2 because you probably should take a science each year.
If you’re in 10th grade or below take option 2 or 3 because it is probably in the curriculum for you to be taking a world history.
If you’re in 11th grade or above take option 1 or 3 because you have probably already taken a world history.
That being said, do what is interesting to you if that means taking option 3, but I strongly encourage you to take an English, Math, Science, History, and language (if in 10th grade or below)
