One of my friends told me (best way to begin a sentence right?) that you can apply to a college as a junior, even though you won't be graduating till you're a senior, and then just defer your admission until the next year, so basically you'll automatically know someplace you can go and might not even have to go through the whole admissions thing senior year.

No you cannot do what your friend said. Colleges set intial dates on which they start accepting applications for admission. Most are in the fall of your senior year but some earlier and even as early as late June after your junior year, but not before. There are some schools, a low number, that will consider admitting juniors in high school but that is to admit you for the fall after your junior year and you do not finish your senior year in high school MIT has such program. However, only geniuses need apply -- those admission programs apply only to super-exceptional high school students.
