ARE THESE CLASSES GOOD ENOUGH FOR MECHANICAL ENGINEERING?

So in Junior year, I took AP Physics 1 and 2, AP US History, and AP Language. I also took Cisco Networking Academy at my school for the first two courses. I did really well in all these classes. Next year, I am taking AP chem and AP Calculus BC (and maybe AP Biology as well), College level intro to engineering course and Cisco 3 and 4 (CCNA Courses). Do you think I should take AP Economics as well or is my senior schedule good enough? I have also have an internship course at my school so I am involved with that as well. Are these AP classes for my senior year good enough?

Try instate schools for your best chances. What matters are scores and GPA. Your SAT is a little weak, are you planning on retaking?

AP classes contribute to your HS rigor, but as stated above, GPA/Test scores/Essay and EC’s will all contribute to your chances at an acceptance. If you are taking a rigorous HS curriculum in comparison with your fellow HS students, then you are good. What is your Home State? How much can you and your family afford? What type of schools are interested in attending? Small/Large/Rural/Urban/Private/Public? These are the questions you need to ask.
Most schools do not consider your AP scores in admission decisions, only the grades you received in these classes.
