What is the best undergraduate major to take (assuming there are no pre law programs available) to gain entrance to good law schools? Coming from a small LAC, would Psychology, Sociology, or Anthropology be acceptable?

Any of them will be fine. Other than accounting or engineering, as long as you are not taking a "vocational’ major you should be fine

Since there is no specific major requirement, you’ll want to pursue a major that has value in itself, in case you do not want to go into law later on or have a career change (example: accounting, economics, engineering, computer anything, etc.) and stay away from a major that has very poor intrinsic value (communications, humanities, art history…).
