Has anyone tried to appeal a rejection from SLO/any other school?
What did you write and have you heard back?
Also, does anyone know how likely SLO is change their mind about an appeal and what situations would change their mind??
Unless you believe there was an outright error it is extremely unlikely that any schools would change or even reconsider an admissions decision. I suggest you move forward and select on of the schools where you have been accepted.

I’m appealing but it’s because I have an extreme case where I was medically absent for the first two years. Even though it’s compelling, I’m scared of getting denied again because it’s so competitive. If you don’t have a reason, I wouldn’t do it. It’ll just set you up for disappointment
