UMd is a great school. Since you are in-state with strong stats your chances there should be excellent. You probably know better than I whether it counts as a safety, but assuming that it does then it makes sense for the rest of your list to be even more selective.
If “Shadowing ER doctor” means that you are premed, then you shouldn’t go into debt for any school on your list (assuming that your in-state flagship is possible without any debt). As such being deferred from Duke might be a blessing, since it will give you the opportunity to compare offers from multiple schools before deciding.
Most of the schools will be reaches just because of the acceptance rate. GPA is slightly low but not that bad. ECs are OK.
SAT Subject scores are mediocre, especially for your demographic (Asian STEM major with premed interest). Most Asian kids will have scored 800 on Math 2 and be around 780 for Science subject tests.
