Hey! So I’m from NJ, and I’ll just comment extensively for NYU, Cornell and Wharton since I’m most familiar with those.
NYU - This is EXTREMLY HARD to get into. Their most competitive programs are Tisch (Arts) and Stern (Business). So I’m guessing you want to do business then. It’s MUCH easier to get into Stern if you’re from the NE, because all the competitive schools are well known, so it’s going to be harder to get in for you, unfortunately.
You have the grades/etc for it, and the EC’s look good, too, but some of them are just ***. You need to shorten the list to the top three that you find most important, and the rest you can just list as “fun stuff I like to do in my spare time, because i’m a wondefully well-rounded student, jaja.” Like the ehru and the Henna stuff sounds interesting, but you didn’t really have any “commitment” in their POI.
Tell them why you want to go there((!!!)). What’s different about Stern than other programs? Is it opportunities? Do you like NYC and connections? People? Campus? Give them some small detailed thing that you randomly found on the interwebs and they’ll love you.
Check this out for some more concrete help:

Also, for Cornell, since it’s an Ivy, you basically just need to get your grades to pristine-ness, make sure you’re Jewish, and write EXACTLY why you want to go there. Make sure your essay is perfect. At this point, you’re either going to be accepted there, or not, it’s all on chance.

And for Wharton, same thing. Wishful thinking can help sometimes haha

It might be a little harder since you’re an Asian. The Admissions officers want people with character and personality, along with good grades, which they usually don’t find with Asians (i’m not being racist, I have a family friend who specifically said that, works in admissions).

Good luck!
