Obviously with Harvard, Stanford, MIT, Tufts, and the other very selective universities in your list, it will be tough (ain’t it for everyone?). But your stats are strong (although I would definitely get that CR score up) and I don’t think they will hold you back. It would help if you posted your GPA, although I would be shocked if it’s anything below like a 3.75 because you seem really bright.
The rock climbing thing is awesome - definitely lends you a sense of authenticity and well-roundedness. This is just a personal opinion, but it really stands out to me when students can succeed athletically as well as academically. A lot of people don’t realize that being involved in a sport can take up the time of 3 ECs. I have no clue how adcoms view sports, but hey, at least you made a good impression on me
At RPI, Penn state, others of the like, I think you stand an awesome chance. For the reaches, I think you’re definitely in the ballpark which is about as good as it can possibly get at those places. You probably already realize that being from the northeast and Asian places you in an insanely competitive pool, especially for those intense STEM fields. Since there’s not anything you can really do about that, my advice would be to let your personality carry you. A lot of people seem to think that just numbers will carry them into an Ivy and completely neglect developing as a person and then come off as robots - and who wants those? Just be as authentically you as can be, pour yourself into that application, and be proud of it. And if you don’t get into the ultra-competitive schools, who cares? You’ll still get in somewhere awesome. And you’ll be able to feel pride that you left it all out there.

The OP’s level of rock climbing is outstanding - easily the equivalent of being a recruited NCAA athlete, though climbing isn’t an NCAA sport, or playing a musical instrument at a conservatory level. She is at a level where she is within reach of qualifying for the national youth team in bouldering. That’s something that is hard to duplicate, and it should be emphasized more, along with possibly a supplemental letter from a team coach. Combined with the OP’s strong STEM credentials and class rank, she should be a "strong"applicant at even the top schools on her list, especially if she can get her CR score up. Obviously, at that level there are no guarantees and everyone is a “reach”, but the OP’s climbing differentiates her from many other applicants, and that’s a strong start.
Try to bring up your CR score. It is your weakest link right now. If you can raise it to 700+, your chance for most of the schools on your list will be improved drastically. Right now, most of the schools are reaches.
Previous commenters have sugar coated your chances sadly. With these current stats, nothing makes you stand out except for the rock climbing. As far as the Ivies, MIT, etc. are concerned, I don’t think you have much of a shot. However, I do think you have a good shot at the schools starting with UC Berkeley going down. Hope I could help.
