Schools I'm going to be applying to in the fall: UC Irvine, UCSB, UCLA (I know I've got no chance, but my mom went there and wants me to apply so I'll make her happy), UC Riverside, UCSD, UC Davis, University of San Diego, Cal Poly San Luis Obispo.

So what are my chances at those schools? Thanks in advance.

I would say that you are a slight reach for San Diego because of your SAT and SAT II scores, but if you can bump those up you should get in. Everything under SD you should be fine for. LA and Berk look like reaches though.

If you can improve on the Lit SATII, or take a different one and do well, you will improve your chances A LOT. A 480 on a Subject Test will be very detrimental at UCLA and UCSD. Also, your chances depend on whether the 3.75 is unweighted gpa or UC gpa.
Right now, I would say
UCLA: virtually impossible
UCSD: Reach (if gpa is unweighted) to Huge Reach (if gpa is UC)
UCI, UCD, UCSB: Match (if unweighted) to Slight Reach (if UC gpa)
UCR: Since your stats seem to make you UC eligible (though you should calculate this yourself) probably somewhere between safety and safe match

UCLA: Reach
UCSD: Slight Reach
UCI/UCSB/UCD: Match
UCR: Safe Match
