I have taken the most rigorous curriculum available to me at my very small school. Only 6 APs by graduation, but that's all that has been available to me.

My ECs are pretty good (could be stronger), but I don't think Canadian schools care much about them.

You have very good grades and pretty good test scores so you should have a good chance at getting in to any of those three schools.
What major are you planning to go for? Because different programs have different admission requirements. In general humanities are the easiest to get into while the natural sciences are harder and engineering tends to be the most competitive undergrad to get into.

I’m looking into biology/biochem majors. Specifically, “Microbiology and Immunology” at UBC, “Cell and Molecular Biology” at U of T, and “Cell Biology” at McGill.

With your grades you should be fine, for those majors. I would say that you should likely get accepted to at least 2 out of three of these schools, if not all of them.

I hope you get a chance to visit these universities, they all look gorgeous, but they are very big.

UBC does care about ECs but U Toronto and McGill only do so when admitting off the waitlist. However, UBC would not care about ECs to the extent, say, Berkeley would.

U Toronto: Low match
McGill: Low match
UBC: Safety (ECs pending)
