Chances with weak extracurriculars (NYU, BU)?

I think my academics are alright for most of the schools I’m looking at but I’m really concerned that my ECs (and test score if I can’t get it up) are lacking.

GPA: 4.93/5.00 weighted (i don’t know my unweighted, it’s kind of tricky to determine because of how my school calculates GPA but I assume it would be around a 4.0?)

APs: European History (5), APUSH (taking now), Language + Composition (taking now), U.S. Government and Politics (senior year), Environmental Science (senior year), Literature + Composition (senior year), Italian Language and Culture (senior year)

I took the only AP offered my sophomore year (none were offered in freshman year), I’m currently taking two out of the three offered junior year (no physics) and will be taking four out of the five offered senior year (no calculus).

ACT: 31 (E: 35, R: 36, M:23, S: 29)

I know I can bring this up to a 32 but I’m really hoping I can get it up to a 33/34 (I’m not so sure I’ll be able to though, math is really not my strong suit)

ECs: Choir (since 7th grade), Orchestra - Violin (9th and 10th grade, I stopped this year because I had a job for the 1st few months of school and didn’t have the time, I never picked it back up because I don’t really enjoy it but I’m thinking maybe I should senior year?), volunteering (over 100 hrs) /working at a public library (i volunteered there in 9th and 10th grade and started working there part-time this school year)

I also work as a cashier during the summer but I don’t know if that would be considered an EC

What are my chances for schools like NYU and BU? Does anyone have any recommendations for good schools I’d be competitive for? I was also thinking of applying to one Ivy (possibly Columbia) but I’m not very confident about my chances.
