How important is the choice of undergraduate college for med school admissions? Would it be better if I went somewhere like UChicago for undergrad and get a mediocore gpa or go to a not as prestigious school but get a great gpa?

I think it would be better if you had some confidence in yourself and believed you could get a great GPA at a great undergrad.

The standard answer is to go to the school you like best.

Now, if your only reservation about UChicago is that you might get a lower GPA, why not go for a year and see? Let's say, you're below average and end up with a 3.0 for your freshman year, transfer to another college for the next 3 years. If you guys truly believe that you can manage a 4.0 at a state school, you will still end up with a very decent GPA if you average a 4.0 for 2 years with a 3.0 for one year. Who knows? You might (gasp!) get a 3.9 at Uchicago! Someone has to get those high GPA's, right?

And if you can't even make 3.0 for your first year, then I think you have a whole lot of other issues...

Does where you go to undergrad matter more than gpa?

Huh? How would you like us to measure these things?
