I cannot fit both college Spanish 3 and college Biology into my schedule (they interfere with one another.) I was planning on taking 4 years of Spanish. Should I drop Spanish 3 and take college Biology or drop college Biology, take normal Biology and stay in Spanish 3? Which would look better for college admissions?
My vote would be Spanish 3 and regular bio.
It depends on what you are planning to do in college. If you are STEM, challenging yourself in that area by taking College Bio and regular Spanish 4 would be good if that is possible. If you are leaning humanities, then the opposite, College Spanish 3 and regular Bio.

Biology, Chemistry, and Physics (at any level) are expected for selective 4-year colleges, as is reaching Level 3 or 4 in a foreign language.
Will you be dropping college Spanish and taking regular Spanish, or dropping Spanish all together.
If it’s just a lower version of Spanish, I’d go for the advanced Bio and regular language.
If it’s dropping Spanish, which means you’ll only get in 2 years of a language, and you’re looking at more selective schools, then taking Spanish would probably be the better option.
But are you a Soph/Junior with options to pick up Spanish next year? Because an advanced science class will look better.

So yes, I would be dropping Spanish all together.
Not taking Spanish 3 would block many options since it’s a core class for college Admissions.
I still have the option of taking Spanish 3 next year, but then that would only be 3 years of foreign language. Will colleges care that I only have 3 instead 4 years of foreign language?
The most selective ones will care. Also, taking a gap year in FL could make it much more difficult to pick back up.
what do you mean by college Spanish - does that mean college prep high school level or does your school call honors level college?
Does it mean an actual college level class? If it is an actual college level class level 3 would be intermediate 1 which may be fine for many colleges though some will expect intermediate 2.

Take College Spanish 3 and regular Bio this year. You don’t want to have a whole year gap of Spanish, it will be much harder to do well after a year.
You didn’t say, but If you are leaning stem, do take a college level science class your senior year.
