Hey Guys

So I'm transferring from a Cal CC this year and I'm working on the activities section. I'm working on some apps to high profile physics/engineering physics private schools. I was filling out the common app and wanted to get some opinions on how I should go about filling out this section.
I have A LOT of STEM experiences and leadership I've been part of and could easily fill up 10 spots and then some with distinct things. But I also have other components to myself that I'm not sure will be reflected by the application.

Just the STEM things here, that are currently the things on my common app:

Currently here are a list of the STEM things that I defaulted to on my application:
3 internships
Caltech twice (one in highschool, one now)
JPL once(last year).

1 research conference coming up loosely based on my JPL internship

At my highschool I founded and led club/class hybrids that gave class credit, one in Bioinformatics which we also published a peer-reviewed article in an educational journal. The other was to teach programming and after I graduated the program matured into a full comp sci class. I was president of an astronomy hybrid program that was already there and participated heavily in it. The last hybrid I was in was in Biotechnology where I got to personally conduct various biotechnology testings with high grade equipment (for example I got to test foods for the presence of GMOs). I was president of Science Club and founded another club that was a humanities/science hybrid, was a captain on our FIRST FRC team.

This year I'm project manager on an experimental capstone project program my CC is starting, and I am also in charge of CAD modelling, build schedule, and design reviews for telescopes the astronomy club i'm in is building. I have a couple of other STEM type things I could talk about but as you can see I'm already at something like 12ish with just these basic list of stem thing .

Examples of other things I'm up to include
I started learning to play a piano a year ago and try to practice everyday (so i end up with most days of the week)
I exercise on a fixed schedule, and in addition to a lot of health/exercise research I cook accordingly for myself everyday. On days where I am with my friends I am our main chef and have created many grand feasts for holiday celebrations.
I've been compiling a large collection of educational material for the last year and been organizing information for a STEM educational youtube channel I want to start for accelerated youth development; I have several comp books of materials, flowcharts, outlines, rehearsal videos and critiques, and am aiming to start up the channel after I work out a few kinks in the following months.
Less busy weeks I engage in large amounts of independent research outside any of these activities. For example, I am constantly researching and outreaching to others with analysis on scientist/industry research pertaining to GMOs and am engaged in outreach for labelling campaigns involving it.
These are multi-hour weekly committments that are part of what I'm up to now and would paint a larger all arond picture of me.
What would you guys suggest. Should I stick with the STEM or try to include some less notable sounding, but more well rounded activities that show the type of person I am now, in my application.
